It takes its name from a nice and humble church named "Santa Teresola", a few meters from the cellar and close to the vineyards planted with Sangiovese, the grapes used for the processing of our novello. It is a wine totally vinified with the original technique of carbonic maceration. Thus the bunches remain in maceration for 15 - 20 days, a period in which the magical processes of this very particular fermentation take place, responsible for the characteristic aromas of this novel of overripe fruit, black cherry, violet and rose. The total quality of a novello is evaluated according to the percentage of carbonic maceration: in the case of Santa Tersola it corresponds to the totality of the product, and it is also for this reason that production is limited to a few thousand bottles. It is a soft, mellow but dry wine, therefore to be consumed with appetizers, first courses or delicate meats; excellent with unseasoned cheeses and cold cuts.
