Manual harvesting of the grapes. Maceration in contact with the pomace for about 15 days and fermentation at a temperature of about 26°C in stainless steel. Complete malolactic fermentation before winter. In spring it is placed in 25 hl large oak barrels where it ages for about 8 months before bottling. Color: Dark ruby red. Bouquet: Intense and enveloping of wild berries, plums and violets, spicy and woody aromas of pepper and licorice. Taste: Full-bodied, elegant, with the right acidity that gives freshness, reducing the alcohol content. The whole is balanced by a soft and persistent tannin. Gastronomic combinations: Particularly suitable in combination with traditional Piedmontese first courses, with grilled meats and vegetables, roasts, braised meats, savory and aged cheeses, meatballs and vegetables.
