Manual harvesting of the grapes. Maceration in contact with the pomace for about 20 days and fermentation at a temperature of about 26°C in stainless steel. Complete malolactic fermentation before winter. In spring it is placed in large 50 hl oak barrels where it ages for at least 30 months, and then moves to steel tanks for at least 12 months before bottling. Colour: Garnet red with orange reflections. Bouquet: Intense red fruit jam and wild berries, floral aromas of dried rose and violet, followed by more complex hints of spices, licorice, leather and undergrowth. Taste: Enveloping, elegant. Long persistence in drinking, thanks to the smooth and harmonious tannins. The alcohol content is well balanced by a surprising freshness, an indication of its great aging capacity. Gastronomic combinations: The classic combination is with succulent dishes such as game, fine grilled meats, stews, boiled meats. Perfect with cured meats, it is also ideal with very aromatic preparations, such as dishes based on truffles, liver and sheep's cheeses.
