Grape variety: Rkatsiteli 85%, Mtsvane 15% Mtsvane (green) This is a Georgian white-grape variety from the Kakheti region which reaches full ripening from the second half of September. Average yield per hectare is 5-8 tons. Yields for Kakhetian Mtsvane must be limited in order to maintain quality. It is used for making both, classic (European) and typical Kakhetian, amphora (qvevri) fermented Vins de Table, Vins de Pays and AOC’s. Principal micro-zones: Manavi, Tsinandali, Akhmeta. Colour: Pale straw Fermentation: The juice is fermented in temperature-controlled stainless steel tanks at 12/14°C. After fermentation, wine goes through batonnage to get more structure and aroma. Tasting Notes: Tsinandali wine perfectly preserves the aroma typical to the Rkatsiteli and Mtsvane varieties. Embodied with fresh grapes, quince and wildflowers, its flavour deliciously combines long-lingering essence of oak and vanilla. Food pairing: Great with light salads, grilled vegetables, chicken with citrus dressing, cheese and steamed fish.
