Those grown in warmer climates tend to have more flavors of spice than their fruit-forward cooler climates counterparts. Its light to medium body, light tannins, and high acidity make it the perfect pairing for dishes that are otherwise best for white wines. Pork, chicken, turkey, creamy soups, and pastas are great pairings. Pinot Noir is also very versatile as it is made in still red wine, sparkling wine, and rose. Some Pinot Noirs can even be aged for 20 plus years.
