Tequila is a Mexican spirit made from the blue agave plant. Tequila can only be made in Mexico according to law and is mostly produced in the region of Jalisco, although certain other places are also allowed to produce it. Most tequilas are around 35-55% alcohol, although some countries like the United States require it to be at least 40% alcohol to be sold there. The color of the tequila is distinguished by the aging process. Silver or Blanco tequila is clear and has not been aged or only aged a very short time. Gold tequila is usually just silver tequila with caramel coloring. Rested tequila is tequila aged in barrels for up to three years and has a golden color. Tequila is mostly served as a shot with lime and salt or as a cocktail like a Margherita, Tequila Sunrise, or a Juan Collins.
