  • CASTELLO DI PERNO LANGHE NEBBIOLO OFFERS A REFINED TASTING EXPERIENCE WITH AROMAS OF FRESH RED FRUITS LIKE CHERRIES AND RASPBERRIES, COUPLED WITH FLORAL HINTS OF VIOLET. ON THE PALATE, IT IS VIBRANT AND WELL-BALANCED, SHOWING JUICY ACIDITY TYPICAL OF NEBBIOLO, COMPLEMENTED BY SOFT TANNINS AND A LINGERING, SLIGHTLY SPICY FINISH. THIS WINE IS AN EXCELLENT CHOICE FOR PAIRING WITH LAMB OR HEARTY DISHES, MAKING IT A VERSATILE AND ELEGANT ADDITION TO ANY MEAL.

VINIFICATION PROCESS
  • THE VINIFICATION PROCESS FOR CASTELLO DI PERNO LANGHE NEBBIOLO BEGINS WITH DESTEMMING AND 48 HOURS OF COLD MACERATION TO PRESERVE THE GRAPE'S FRESH AROMAS. THIS IS FOLLOWED BY A 20-DAY SPONTANEOUS FERMENTATION AT CONTROLLED TEMPERATURES. THE WINE IS THEN AGED FOR 8 MONTHS IN LARGE SLAVONIAN AND FRENCH OAK CASKS, ADDING DEPTH AND COMPLEXITY. BEFORE BOTTLING, IT UNDERGOES A BRIEF MATURATION IN CONCRETE TANKS AND IS THEN REFINED IN THE BOTTLE FOR AT LEAST 6 MONTHS, RESULTING IN A WELL-BALANCED, STRUCTURED WINE.
